Dark purple-red color. On the nose there is a lot to discover: black and blue berries, violets, black pepper, cloves, forest floor and wonderfully toasted notes of the new oak. In the mouth, it opens nice and juicy with present but refined tannins. The taste is deep and intense. The finish is long and dry and leaves an arsenal of impressions.
Roast roe deer with its winter vegetables, fillet of doe with wild mushrooms, aged Wagyu sirloin steak and other rich and exclusive meals, but on occasion drink it on its own to fully enjoy its extraordinary class.
- climate
-
Due to its southern location close to the ocean and close to the mountains, Yarra Valley has a cool climate with an average temperature between Bordeaux and Burgundy. Winters can be cold and most rain falls in winter and spring. Summers are moderately warm and dry with cool nights. It makes Yarra Valley Australia's its most distinctly cool-climate appellation.
- soil
-
Poor sandy soils with loam and clay that are on average at a height of 120m which protects them from winter frost. The slopes provide good drainage and guarantee a perfect absorption of the sun's heat. All grapes come from the famous Hexham vineyard.
- vinification
