Beautiful, shiny, light red color with shades of orange and brown. The nose is profusely stimulated by aromas of cherries, blackberries, raisins, rosehip, plums, cedarwood, tar, tobacco, balsamic and roses. The structure in the mouth is impressive and provides a lasting stimulation. This wine is of course a unique experience in itself, but if you have to combine it with food, keep it for exquisite dishes such as matured red meat with a delicious sauce, a fillet of delicate game such as roe buck or a young pigeon with accompanying gravy. It would also go wonderfully with different mature cheeses, but undoubtedly deserves a solo performance most among wine lovers who want to enjoy an exceptional tasting moment together.

The proximity of the Alps and the Dolomites determine the weather and ensure cold winters with sufficient precipitation. The proximity of the Mediterranean makes the summers hot and dry with cooling during the night. The high vineyards provide even more ventilation and cooling.

Barolo: Described by the Italians themselves as "The King of Wines and the Wine of Kings". Bricco delle Viole is an exceptional vineyard and is among the highest and best in Barolo. It is rich in white soils with a lot of lime, magnesium and manganese. This results in absolute top Barolos with unprecedented finesse.

vinification

100% Nebbiolo. Grapes are picked by hand. The complete fermentation takes place in wooden and cement vats and lasts between 30 and 40 days, during the first 15 days the wine is pumped over its must 3 times a day and during the maceration on its skins. The next 15-20 days, continuous immersion of the must undergoes while its fermentation is still going on. The wine is then matured for at least 18-24 months in a mix of small and large barrels before being transferred to cement tanks to rest there for at least 6 to 12 months. It is then bottled to rest in the bottle for another 9 to 18 months before being released on the market.
