Beautiful, deep, dark red, shiny color. In the nose we find a lot of red and dark fruit. Red currants, cassis, ripe plums and figs neatly wrapped in a 'toasty' woody touch. Nice structured style. Shiraz provides body and ripe black fruit while Cabernet Sauvignon adds some more acidity and red fruit. Nebbiolo finishes it off and provides structure and finesse. Wonderfully long finish.

Its solid character (powerful wine with aging potential that will gain in elegance and finesse after some years of cellaring) demands a good piece of meat. Grilled côte a l'os, ribs on the barbecue, filet pur with pepper sauce and other hearty dishes with beef.

climate

Due to its southern location close to the ocean and close to the mountains, Yarra Valley has a cool climate that lies between Bordeaux and Burgundy in temperature. Winters can be cold and most precipitation falls in winter and spring. Summers are moderately warm and dry with cool nights. It makes Yarra Valley Australia's most distinctly cool-climate appellation.

soil

Cabernet and Nebbiolo (Yarra Valley): Poor sandy soils with loam and clay that are on average at an altitude of 120m which protects them from winter frost. The slopes provide good drainage and guarantee a perfect absorption of the sun's heat. Shiraz (Heathcote): Typical red clay/loam soils with good water management.

vinification

The grapes are picked in the cool of the morning. Classic cool fermentation in stainless steel barrels. The different grapes are fermented separately and then matured for 18 months in oak barrels, 20% of which are new. Then the final blend is made.
