Bright, light yellow color with green reflections. Aromatic nose with impressions of candied lemon, yellow peach, flowers and white fruit. Dry but ripe and lively style. Balanced and challenging on the palate. Medium long finish. A lot of wine for a soft price!

Perfect as a refreshing aperitif, shellfish, grilled fish and goat cheese.

climate

The Cévennes has a Mediterranean climate with strong influence from the Pyrenees. During the night and in winter, it can cool strongly. Regular precipitation and winds from the mountains. Summers are hot and dry.

Dry soils with stones, clay and limestone (different vineyards).

vinification

100% Sauvignon blanc. After picking, the grapes are gently pressed and undergo cold fermentation in inox vats. No malolactic fermentation to preserve as much freshness as possible. After a short rest of several months, the wine is bottled.
