
The wine possesses remarkable clarity and precision in a medium-bodied, focused style. Suggestions of amarena cherries, menthol, spices and minerals emerge with air, adding further complexity. The Monte Sant'Urbano is one of the more accessible Amarones in its medium-bodied, lithe structure, but the overall balance here is beyond question. This is a wonderful effort from Speri. Anticipated maturity: 2010-2020.
This special wine made from dried grapes calls for special, opulent and intense dishes such as winter stews with a 'sweet touch', game dishes, savoury mould cheeses and desserts with chocolate, but above all ... just like that, as a delicacy in itself, which gives every special occasion even more meaning!

Mediterranean climate influenced by the surrounding Dolomites and Lake Garda, which tempers the heat in the summer heat and softens the cold in winter. This ensures a longer growing and flowering period and thus increases the quality of the grapes.

The subsoil of Castelrotto differs from the rest of Valpolicella (Limestone) due to a thick layer of sandstone which contains a lot of fossil matter, which means the vine has to work harder to get water and better grapes are obtained.

Cultivation system: The Verona pergola system is placed on ridges supported by dry stone walls known as "marogne". This is specifically to support the terrace culture. A density of 3300 vines per hectare guarantees a yield of 9800 kilos per hectare. Manual selection of the best bunches at the end of September / beginning of October during the harvest. Drying for about 90 to 110 days in fruit - drying rooms with ideal temperature, humidity and ventilation. Maceration at 16°C-18 °C temperature in stainless steel tanks for 35 days. Separation of the skins at the end of February and completion of the alcoholic and malolactic fermentation in 3000 liter barrels where the wine rests for 12 months followed by another 12 months in smaller Barriques. Before being put on the market it rests for another 12 months in the bottle.
