Grape Varieties: Antão Vaz; Arinto and Roupeiro. The grapes are carefully hand-picked and taken to the winery in 25 kg boxes, where a second triage takes place on a sorting table. The grapes are then gently pressed using a pneumatic press and the juice remains for 48 hours at low temperatures for decanting. It is then racked off its lees and inoculated with selected yeasts. Fermentation takes place in temperature-controlled stainless steel vats.
